2 Ingredients, Sugar-Free, Dairy-Free, Nut-Free Vegan Strawberry Ice Cream (No Churn)

949ADDEE-25FE-48C5-8E41-3FCD0E8992CF.jpegMost vegan “nice cream” recipes call for coconut milk or bananas as a base, both of which are creamy and delicious. But, I don’t always like the high sugar content of the bananas or high fat content of the coconut milk, so what’s a girl to do? I bring you: a 2 ingredient, smooth, ice-cream-like dessert that tastes amazing and is also packed with fiber and omega-3 fatty acids. The secret ingredients are, drum roll please: frozen strawberries and a ripe avocado. You heard that right. It sounds weird, but, trust me, it’s absolutely delicious and you don’t taste the avocado at all. Because strawberries are naturally sweet, there’s no need to add any sugar if you select good berries (if you buy frozen berries, you’ll likely need to add some sweetener). It’s important that the strawberries are completely frozen hard to get the right consistency. I didn’t freeze the avocado because I wanted a creamy texture. I have not tried this with any other type of berry, but if you do, let me know how it comes out! Here’s the recipe:

Ingredients:
– 1 cup frozen strawberries (with stalks removed)
– ½ ripe avocado (unfrozen for a smoother consistency)

Optional Add-in Ingredients:
– Maple syrup or sweetener of choice
– A squeeze of lemon or lime
– Vanilla

Directions:
Blend your ingredients in a food processor until smooth and eat immediately. Put on your favorite toppings (in the photo above I shaved chocolate from Antidote Chocolate, and also sprinkled on dried coconut flakes and dried strawberries. I also drizzled on some maple syrup to make it sweeter).
